I’m the home chef this weekend …

What begins as a small birthday party for about a dozen or so people, turned out to be a party of 30 people. Syafie must be happy with so many friends around. Even one of the coaches of his Taekwondo sparring class dropped by to celebrate his birthday.

What scared me though was that I did not have enough food for so many guest. I initially had the following on the menu.

  • Lamb Stew
  • Couscous
  • Rice Pilaf
  • Chicken Frankfurters
  • Tuna Avocado Salad
  • Potato Salad
  • Sweet Bread

When I knew more were coming, I decided to whip up another dish … “Bubba’s Sloppy Joe” my quick fix to entertaining guests. It’s very quick to make. Here’s the recipe.

Bubba’s Sloppy Joe


  • 500 gms Ground Beef
  • 4 cloves garlic, chopped
  • 1 cup chopped onions
  • 1 cup chopped mushroom
  • 1 cup chopped tomatoes
  • 1 sprig of thyme (chopped)
  • 2 cans (425gms can) baked beans.
  • some olive oil

Brown the onions and garlic. The moment the onions started to caramalise, and the smell of fried onions fill the kitchen, put in the ground beef and keep stirring until the juices from the beef evaporata and cooked off. Add the chopped mushroom, chopped tomatoes and the thyme. Mix the inredients in and pour in the 2 cans of baked beans into the pot. Cook for about 5-8 minutes and serve. No salt needed since the baked beans are already nicely seasoned. Garnish with chopped green onions and crispy fried shallots.

Pity I forgot to get a picture of the sloppy joe. It went down pretty quickly. Even the Lamb Stew did not go as fast.

The food went pretty quickly that I got scared that the guests did not get enough around. So, I went back into the kitchen and make a pot of Cream of Mushroom soup to further add on to the spread on the buffet table.

Phew, luckily the food was just enough. When the guests left at around 7:00pm, I only need to handle with a little leftover, maybe enough for a couple or so people. Overall, it went well, the post party clean up only took a couple of hours, and I had a chance to sit back before calling it a day.

I do hope today’s party make up for my wife and I having to work yesterday, on Syafie’s birthday.
