Bubba’s Bread n Butter Pudding

I feel like eating something sweet this evening, so from whatever’s available in the fridge, I whipped up this easy dessert … bread and butter pudding.

Here’s the simple recipe.

Mind you, I do a lot of  “eye-balling ” when it comes to the quantity of the ingredients, so, I apologise for that if it makes it difficult to follow through with the recipe.

I’ll start with the list of ingredients:

  • Wholemeal bread slices
  • brown sugar
  • eggs
  • milk
  • vanilla essence
  • cinnamon powder
  • raisins
  • toasted almond flakes

Start by buttering (is there such a word?) the bread then tear them into pieces, layering a layer of the bread in a baking dish. Then sprinkle sugar, cinnamon powder, raisins and almond flakes. How much sugar? Well, it depends, if you have a sweet tooth, put in a lot. If you are diabetic, cut down the sugar a little.

Make another layer of the buttered bread pieces. Repeat layering with cinnamon, sugar, raisins and almond … then the bread again, then the sugar, fruits and nuts again … three layers should be enough but you can go on until the baking dish is filled up.

Soak the bread with a mixture of egg and milk. As a guide, I use 1 egg to one cup of milk and 1 teaspoon of vanilla. Make enough of the egg mixture just to cover the bread layers. Don’t put too much. Thoroughly soak the bread layers in the baking dish, letting the milk and egg mixture soak in, and the bread begin to break down. Roughly 20 minutes or so.

In the mean time heat oven to 170 celcius. Bake 40-50 minutes until the top crusts to golden brown. Let it rest and cool before serving.
